Sauerkraut Casserole
Sauerkraut Casserole is an moderately easy dinner. Made with 1 large can sauerkraut, drained, 1 small can mushrooms, chopped, 1 medium bell pepper, thinly sliced, 2 whole onions, chopped and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Drain the sauerkraut and set aside. Preheat oven to 350°.
In a large saucepan, sauté mushrooms, peppers and onions in a little butter until soft. Add sauerkraut, tomatoes and sliced sausage mixing well after each addition.
Place in a covered dish and bake for 1 hour.
If casserole is too juicy, uncover and bake for additional 30 minutes.
