Saucy Pork Chop
Saucy Pork Chop is an impressive dinner. Made with 1 tsp. butter or margarine, 1/4 c. sliced fresh mushrooms, 1 tbsp. chopped onion, 1 tbsp. chopped green pepper and 1 small tomato, peeled and finely chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place butter in a shallow 1-quart casserole dish.
Microwave at High for 20 seconds, or until melted.
Add mushrooms, onion and green pepper; cover and microwave at High for 2 to 3 minutes, or until vegetables are tender, stirring once.
Stir in tomato, water, lemon juice and seasonings.
Place pork chop over mixture and spoon a small amount of vegetable mixture over pork chop.
Cover; microwave at Medium (50% power) for 8 to 10 minutes.
Turn pork chop over; cover and continue to microwave at Medium for 5 to 10 minutes, or until meat next to bone loses pink color.
Serve pork chop over rice; garnish with green pepper ring, if desired.
