Santee Catfish Stew
Santee Catfish Stew is an moderately easy dinner. Made with 6 lb. boneless fish, 2 lb. bacon, 1 lb. onion, chopped, 2 cans tomato soup and 4 full cans water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Fry bacon; take bacon up and fry chopped onions until tender. Drain almost all fat off and put tomato soup, water and ketchup in with onions.
Add salt and pepper.
Return bacon to sauce and let simmer for at least one hour.
About 45 minutes before ready to eat, add serving size pieces of fish.
Do not stir, but poke occasionally.
Serve on hot rice.
Best cooked in a black iron pot.
