Salmon Patties
Salmon Patties is an moderately easy dinner. Made with 1 (14 3/4 oz.) can pink salmon (undrained), 1/2 c. saltine cracker crumbs, 1/4 c. corn meal, 1/4 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Drain salmon, reserving liquid.
Set liquid aside.
Remove skin and bones from salmon.
Combine cracker crumbs and reserved liquid.
Let stand 5 minutes or until liquid is absorbed.
Stir in salmon, corn meal and the next 3 ingredients.
Shape salmon mixture into patties.
Pour oil into skillet about 1/4-inch deep.
Fry patties in hot oil over medium heat until browned, turning once.
Drain on paper towels.
