Salmon Muffins
Salmon Muffins is an moderately easy dinner. Made with 1 (7 3/4 oz.) can red salmon, milk, 2 tsp. white sugar, 1/4 c. salad oil or melted shortening and 2 c. flour, sifted (all-purpose), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Drain and flake salmon, saving liquid.
Add sufficient milk to liquid to measure 1 cup.
Mix and sift flour, baking powder, salt and sugar into mixing bowl.
Make a hole in center of dry ingredients.
Combine oil, egg and milk mixture.
Add to dry ingredients.
Stir just until moistened to make a lumpy batter. Do not overmix.
Fold in salmon.
Spoon into greased muffin tin (2/3 full).
Bake at 425Β° for 15 to 20 minutes.
Makes 1 dozen muffins.
Nice served with a salad.
