Salmon Loaf
Salmon Loaf is an moderately easy dinner. Made with 2 c. salmon, flaked, 3 eggs, separated, 1/2 c. bread crumbs, buttered bread crumbs for topping and 1/2 c. diced celery, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Drain and flake the salmon.
Mix together the lemon juice, salt and pepper and add to the salmon.
Add the beaten egg yolks, bread crumbs, melted butter and celery.
Fold in stiffly beaten egg whites and mix lightly.
Pour salmon mixture into greased mold and cover with buttered bread crumbs; set the mold in a pan of hot water.
Bake in a 350Β° oven for 30 minutes; unmold.
