Salmon Croquettes
Salmon Croquettes is an moderately easy dinner. Made with 8 tbsp. butter, 1 to 2 tbsp. flour, 1 onion, chopped, 1 c. milk and juice of 1 lemon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Brown onion in butter until clear.
Add enough flour to thicken.
Stir in all of the salmon juice and milk.
When this thickens, add mashed salmon and lemon juice.
Mix well.
Chill for 3 to 5 hours.
When thoroughly chilled, shape into croquettes. Dip in beaten egg and roll in crumbs.
Fry in hot oil until tender.
Serves 4.
