Salmon Confetti
Salmon Confetti is an impressive dinner you can prepare in about 1 hour 44 minutes. Made with (1 lb.) can red salmon, c. elbow macaroni, large onion, chopped, green pepper, chopped and c. chopped celery, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Drain salmon.
Reserve liquid.
Cook macaroni.
Saute onion, green pepper and celery in butter for 10 minutes.
Stir in flour. Cook, stirring, for 2 minutes.
Add milk; stir until thickened. Stir in reserved salmon liquid, salt and pepper and 2 cups cheese. Cook, stirring, until cheese is melted.
Stir in pimento, salt and pepper.
Combine macaroni and salmon mixture in a 1 1/2-quart casserole.
Sprinkle with remaining cheese.
Bake at 350Β° for 20 minutes or until very hot.
