Salad Bar Minestrone
Salad Bar Minestrone is an moderately easy dinner. Made with 1 1/4 lb. mixed salad bar vegetables (7 c.), 1/2 lb. sweet italian sausage, 1 clove garlic, chopped, 2 tbsp. olive oil and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Slice any large vegetable into bite size pieces.
Saute sausage and garlic in oil in a large pot until meat is no longer pink.
Drain most of oil.
Add vegetables.
Saute 2 to 5 minutes until vegetables begin to brown.
Stir in tomato sauce, broth, water, beans and seasonings.
Simmer, uncovered, 15 minutes. Sprinkle pasta over soup; simmer 15 minutes or until pasta is tender.
