Rotel Chicken
Rotel Chicken is an moderately easy dinner you can prepare in about 1 hour 24 minutes. Made with large fryers, large chopped green peppers, large chopped onions, (1 lb.) box velveeta cheese and large can mushrooms, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Boil chicken and save 2 quarts of broth.
Saute onions and bell peppers.
Cook vermicelli in broth saved; don't drain.
Add Ro-Tel tomatoes and Worcestershire sauce; cook 3 or 4 minutes. Add drained peas, mushrooms, onions and peppers.
Add cheese, cut in chunks, and stir until cheese is melted.
Add cut-up chicken and stir thoroughly.
Cook 45 minutes at 350Β°.
Freezes well.
