Ricotta Pineapple Muffins
Ricotta Pineapple Muffins is an moderately easy dinner. Made with 1 egg, oil, 1 1/2 c. ricotta cheese, 1 c. crushed, well-drained pineapple and 2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a measuring cup, place the egg and add enough oil to make 1/2 cup.
Add the egg and oil mixture to the Ricotta cheese and mix until smooth.
Add the crushed pineapple.
In a separate bowl, combine the dry ingredients and blend gently.
Fill greased muffin cups 2/3 full.
Bake in a 400Β° oven for 25 minutes.
Makes 1 dozen muffins.
