Rice Salad(Serves 8) is an moderately easy dinner. Made with 1 (7 oz.) pkg. long grain and wild rice mix, 1/2 c. chopped green pepper, 1/2 c. chopped yellow pepper, 2/3 c. pine nuts, toasted and 1/3 c. olive oil, this recipe delivers authentic, satisfying flavors. Cook rice according to package directions.
Combine cheese, peppers, onion, nuts and pimento in large bowl.
Combine oil, vinegar and pepper well; pour over rice mixture.
Cover and refrigerate up to 24 hours.
Serve on lettuce leaves, if desired.
