Rice Casserole
Rice Casserole is an moderately easy dinner. Made with 3/4 c. coarsely chopped green pepper, 3/4 c. chopped onion, 3/4 c. chopped celery, 2 tbsp. vegetable oil and 2 c. strong beef consomme or broth, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Stir-fry pepper, celery and onion in the oil in a large skillet about 8 minutes, until tender.
Add consomme and rice. Cook, stirring for 5 minutes.
Blend in mushroom soup.
Pour into lightly buttered 2-quart baking dish.
Cover.
Bake in oven at 300Β° for 1 hour or until rice is done and liquid has been absorbed.
Decorate, if you like, with pimento strips.
