Rice-Artichoke Salad
Rice-Artichoke Salad is an easy dinner. Made with 1 box chicken flavored rice-a-roni, cooked as directed (omitting butter), let stand until cool, 1/4 c. onion, chopped, 1/2 c. ripe black olives, chopped, 1/2 green bell pepper, chopped and 1 jar marinated artichoke hearts, drained (reserve juice) and chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Add juice from artichokes with 1/2 teaspoon curry powder and 1/3 cup mayo; toss all together.
Make 24 hours before serving. Will keep in refrigerator for weeks.
