Rhubarb Pie
Rhubarb Pie is an moderately easy dinner. Made with 3 c. rhubarb, cut in 1-inch pieces, 1 egg, 1/2 tsp. lemon juice, 1 c. sugar and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Wash and cut rhubarb into small 1-inch pieces.
Beat egg; add lemon juice, sugar and flour.
Mix together and pour over chopped rhubarb.
Stir until well coated.
Pour into unbaked 9-inch pie crust.
Dot with oleo.
Cover with top crust.
Sprinkle with 1 teaspoon sugar and prick holes with fork.
Bake at 425° for 10 minutes and then at 350° for 30 minutes or until golden brown.
