Rhubarb Pie
Rhubarb Pie is an moderately easy dinner. Made with 3 c. finely diced rose rhubarb, 3 egg yolks, beaten, 1 1/4 c. sugar, 3 tbsp. flour and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix rhubarb with the beaten egg yolks.
Blend in the sugar, flour, salt, nutmeg and melted butter.
Mix thoroughly.
Put in a pastry lined pan.
Bake in hot oven (425° or 450°) for 8 to 10 minutes.
Reduce oven to 325° and bake for about 35 minutes or until filling is firm.
Serve plain or with Cool Whip or vanilla ice cream.
