Rhubarb Muffins
Rhubarb Muffins is an moderately easy dinner. Made with 1 1/4 brown sugar, 1/2 c. oil, 2 eggs, 2 tsp. vanilla and 1 c. buttermilk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix sugar, oil, eggs, vanilla and buttermilk.
Sift dry ingredients and mix with egg mixture.
Fold in rhubarb.
Place in muffin tins and sprinkle tops with mixture of 1/3 cup sugar and 1 teaspoon cinnamon.
Bake at 400Β° for 20 to 25 minutes.
Makes 18 muffins.
