Rhubarb Bread
Rhubarb Bread is an moderately easy dinner. Made with 3/4 c. brown sugar, 3/4 c. white sugar, 2/3 c. canola oil, 2 egg whites, beaten and 1 c. buttermilk (using 1 c. skim milk, 1/2 c. vinegar), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine sugar, oil and egg whites.
Add buttermilk and vanilla, mixing well.
Sift flour, soda and salt; add to the above.
Fold in rhubarb and nuts.
Bake in 2 loaf pans that have been sprayed with Pam, lightly floured.
Mix 1/4 cup brown sugar and 1 teaspoon cinnamon.
Sprinkle over bread mixture.
Bake at 350Β° for 45 minutes to 1 hour (until done).
