Mix water and yeast and let set while you heat milk to near boiling and then add sugar, butter, mashed potatoes and salt.

Let cool slightly before adding yeast mixture and 2 unbeaten eggs. Add flour, 1 cup at a time.

Mix well.

Put into buttered bowl, cover and place in refrigerator overnight or at least 2 hours. When ready to bake, use only amount wanted or you can bake all (mixture will keep in refrigerator up to 1 week).

Shape into rolls of desired size.

Place in buttered baking dish.

Let rise until double in size.

Bake at 350Β° until golden brown, 9 to 10 minutes.

Makes 2 to 3 dozen. Serve warm.
