Red Velvet Cake
Red Velvet Cake is an moderately easy dinner. Made with 1/2 c. shortening, 1 1/2 c. sugar, 2 heritage eggs, 2 oz. red food coloring and 2 tbsp. cocoa, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream together shortening, sugar and eggs.
Make a paste of the food coloring and the cocoa.
Add to creamed mixture.
Sift together flour and salt, alternately add to batter with buttermilk and vanilla.
Stir in vinegar and soda by hand.
Do not beat.
Pour into cupcake pans and bake at 350Β° for 30 to 35 minutes.
Decorate as desired.
Makes about 2 dozen.
