Red Rice
Red Rice is an moderately easy dinner. Made with 2 c. rice, cooked, 2 medium bell peppers, 2 medium onions, 4 strips bacon, fried crisp and 1 can tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry bacon and place on paper towel.
Brown onions and peppers in drippings.
Add tomatoes, sauce and bacon to the rice.
Pour in greased casserole.
Sprinkle top with Parmesan cheese and bake at 325Β° for 30 minutes or until rice is dry enough to separate.
May add 1 pound cooked shrimp, 1 cup cooked sausage, pork or ham.
