Ratatouille
Ratatouille is an moderately easy dinner. Made with 2 medium onions, sliced thin, 2 medium green peppers, sliced thin, 1 large clove garlic, crushed, 1 medium eggplant, peeled and cut in 3/4-inch cubes and 2 medium zucchini, cut crosswise into 1/4-inch slices, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute onions, peppers and garlic until onions are slightly cooked.
Add all ingredients except parsley.
Cover and simmer 25 to 30 minutes until vegetables are tender but crisp.
Stir in parsley, cook 5 to 10 minutes longer.
Serve hot or cold.
