Ranch Dinner
Ranch Dinner is an moderately easy dinner. Made with 1 qt. sliced raw potatoes, 3/4 c. uncooked rice (not instant), 2 lb. ground chuck, 2 large onions and 2 green peppers, sliced thin, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Spread potatoes on bottom of a 9 x 13-inch pan.
Add salt, pepper and garlic.
Sprinkle rice over potatoes.
Crumble meat and fry in skillet.
Then spread over the potatoes and rice.
Arrange onions over the meat and peppers over the onions.
Pour tomatoes over all and add water up to the level of the rice.
Lay pieces of cheese on top.
Bake at 400° for 40 to 45 minutes, then at 350° for 40 minutes more.
Let stand 15 minutes before serving.
This is good made early and put in the oven to heat.
