Raisin Bran Muffins
Raisin Bran Muffins is an moderately easy dinner. Made with 1 (15 oz.) box raisin bran, 3 c. sugar, 5 c. flour, 4 eggs and 5 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix all dry ingredients in a very large bowl.
Add eggs, buttermilk and oil, beat together.
Mix well with large spoon until all ingredients are wet.
Store in covered container in refrigerator.
Grease muffin tins and fill 2/3 full when ready to bake.
Bake 15 minutes at 400Β°.
This dough will keep for 6 weeks in refrigerator. Half recipe is enough for many households.
I bake right away.
Then when cooled, I arrange on meat trays, 6 on one tray.
Wrap with plastic bag and freeze.
Makes 4 dozen.
Can be made in small muffin tins.
Great for luncheons.
