Quick Pickled Cucumbers
Quick Pickled Cucumbers is an moderately easy dinner. Made with 1/2 c. white vinegar, 1/4 c. sugar, 1 1/2 tsp. salt, 1/4 tsp. crushed red pepper and 8 kirby cucumbers (about 2 lb.), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a 13 x 9-inch glass baking dish, stir together vinegar, sugar, salt and crushed red pepper. Cut each unpeeled cucumber lengthwise into 6 wedges.
Place in baking dish with marinade. Peel carrot and cut crosswise in half. Cut each half lengthwise into matchstick thin strips.
Place carrots in baking dish with cucumbers. Toss to coat.
Cover and refrigerate at least 4 hours, stirring occasionally.
Makes 16 accompaniment servings.
