Quick Noodles is an moderately easy dinner. Made with 2 eggs, well beaten, 1/2 c. milk, 2 rounded tsp. shortening (measure then soften), 1/2 tsp. salt and 2 c. flour or more to make stiff dough, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix all ingredients.
Roll out like pie crust.
Cover with flour.
Double over half again.
Press with rolling pin.
Cover top with flour.
Start at one end and roll dough into a roll. Slice diagonally from end of roll into thin slices.
Drop into boiling broth.
Don't stir; just push apart.
Boil 5 minutes. Don't cover.
