Quick "N" Hearty Mushroom Soup is an moderately easy dinner. Made with 1 lb. fresh mushrooms, sliced or 2 cans mushrooms (6 to 8 oz. each), salad oil, 1 lb. hamburger, 1 can whole tomatoes, crushed and 1 can (10 3/4 oz. size) beef broth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute mushrooms in a little oil; set aside.
Brown hamburger, draining off fat.
Add tomatoes, mushroom mix, broth, water and seasonings.
Bring to boil.
Reduce heat and simmer, uncovered, for 5 minutes.
Stir in rice and cover.
Set aside for 5 minutes. Makes 9 cups.
