Quick Beef Minestrone Soup
Quick Beef Minestrone Soup is an moderately easy dinner. Made with 1 lb. beef tip steak, cut 1/8 inch thick, 1 pkg. frozen mixed vegetables (10 oz.), 1/2 c. uncooked elbow macaroni, grated parmesan cheese (optional) and 3 c. water, this recipe delivers authentic, satisfying flavors. In 3 quart pan, combine water, vegetables, tomatoes, pasta, bouillon and basil.
Bring to boil; reduce heat to low.
Simmer uncovered 10 minutes until pasta is tender.
Stir beef into simmering soup.
Immediately remove from heat.
Cover and let stand 5 minutes.
Sprinkle with cheese, if desired.
