Quick and Easy Veggie Soup
Quick And Easy Veggie Soup is an impressive dinner. Made with 1/2 lb. ground beef, 1 tbsp. vegetable oil, 1 can tomato paste, 1 can ro-tel tomatoes with green chilies and 1 can mixed beans (pintos/northern), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place fresh vegetables in Dutch oven with vegetable oil and cook until they start to get light brown.
Put ground beef in and brown.
Immediately add all other ingredients and simmer for at least 30 minutes.
Better if slow simmered for longer.
Makes about 4 quarts of soup.
Yummy!!
Serve with corn bread.
