Quiche Lorraine
Quiche Lorraine is an moderately easy dinner. Made with 1 (9-inch) unbaked pie crust shell, 2 tbsp. finely chopped onion, 1 c. chopped ham or crisply fried and crumbled bacon, 1 1/2 c. shredded cheese (i use cheddar; swiss is wonderful) and 1/2 c. cooked, chopped broccoli (optional), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat oven to 425° while you make your crust.
Sprinkle onion, ham, cheese and broccoli in crust.
Beat remaining ingredients until blended; pour over ham mixture.
Bake 15 minutes.
Reduce oven temperature to 300° and bake about 30 minutes or until knife inserted 1-inch from edge comes out clean.
Let stand 10 minutes before cutting.
Makes 6 servings.
