Pumpkin Gingerbread
Pumpkin Gingerbread is an moderately easy dinner. Made with 1 3/4 c. flour, 2/3 c. sugar, 2 1/4 tsp. baking powder, 1/2 tsp. ground ginger and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350°.
Grease and flour 1 (9 x 5-inch) loaf pan or 3 (5 1/2 x 3-inch) pans.
Into bowl, sift together flour, sugar, baking powder, ginger, salt and cloves.
In another bowl, combine pumpkin, egg, milk and oil; blend well.
Add flour mixture and stir until blended.
Stir in crystallized ginger.
Pour batter into prepared pan and bake 55 to 60 minutes or until wooden toothpick inserted in center comes out clean.
Cool in pan 15 minutes on wire rack.
Serve warm or cool completely.
