Pumpkin Cookies
Pumpkin Cookies is an moderately easy dinner. Made with 2 c. shortening, 2 c. sugar, 2 eggs, 1 (29 oz.) large can pumpkin or 3 1/2 c. and 1 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Stir together eggs, sugar, shortening, vanilla and pumpkin. (I use an electric mixer.) Mix in a separate bowl the flour, soda, baking powder, salt and cinnamon.
Add flour mixture to pumpkin mixture, a cup at a time, to make sure it gets mixed thoroughly.
Drop by spoonfuls onto a greased cookie sheet. (I use Reynolds Wrap nonstick release.) Bake at 375Β° for 10 to 12 minutes.
