Pueblo Chicken and Rice
Pueblo Chicken And Rice is an moderately easy dinner. In large bowl, combine rice, tomatoes, onion, chilies and olives.
Spoon 1/2 into 2 1/2-quart dish.
Spread with chicken, 1/2 of sour cream and 1/2 of cheese.
Top with remaining rice mixture, sour cream and Jack cheese.
Chill 24 hours.
Bake uncovered in 350Β° oven for 45 minutes (1 hour if chilled) or until hot throughout.
Let stand 10 minutes before serving.
