Prune Spice Cake
Prune Spice Cake is an moderately easy dinner. Made with 2 c. sifted all-purpose flour, 1/2 tsp. salt, 1 tsp. soda, 1/2 tsp. double-acting or 1 tsp. fast-acting baking powder and 1 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Have shortening at room temperature.
Assemble all ingredients and utensils needed.
Grease 2 (9-inch) layer cake pans.
Pit and drain prunes.
Sift flour once before measuring.
Preheat oven to baking temperature.
Sift together the first 7 ingredients.
Put the next 3 ingredients into large bowl of Mixmaster.
Beat on Number 8 speed for 1 1/2 minutes, scraping bowl while beating. Stop mixer.
Add prunes, then add sifted flour mixture alternately with buttermilk or sour milk, while beating on Number 3 speed. Scrape sides of bowl while beating and beat only enough to blend, about 2 minutes.
Pour batter into prepared pans.
