Primavera Salad
Primavera Salad is an moderately easy dinner. Made with 1 lb. broccoli, 1 (12 oz.) pkg. bow tie pasta (uncooked), 1 (10 oz.) pkg. fresh spinach, 1 lb. smoked turkey breast, cut in thin strips and 1 pt. cherry tomatoes, halved, this recipe delivers authentic, satisfying flavors. Remove broccoli leaves and tough ends and discard.
Wash good and cut in 1-inch pieces.
Cook in boiling water, covered, for 1 minute.
Drain immediately and plunge in ice cold water to stop the cooking process.
Drain, pat dry and chill.
Cook pastry from package directions.
Drain.
Rinse with cold water and drain again.
Combine pasta and Versatile Vinaigrette and toss to coat. Place in a large Ziploc bag and chill for 2 hours or overnight. Wash spinach and remove stems.
Combine spinach, pasta, broccoli, turkey and remaining ingredients; toss gently.
