Potato Stuffed Peppers

Make mashed potatoes, but omit the milk.
Fry 1 small onion in butter and mix with potatoes.
Mix together Parmesan cheese and 2 beaten eggs.
Add to potatoes.
Add dash of garlic powder and parsley.
Stuff peppers with potato mixture and make a cork out of bread for the end of each pepper.
Place on an oiled roasting pan. Cover and bake at 325Β° for 15 to 20 minutes on each side.
Salt and pepper to taste.
