Potato Soup
Potato Soup is an moderately easy dinner. Made with 3 c. diced raw potatoes, 1/2 c. finely chopped onion, 1/2 c. finely chopped celery, 3 c. water and 2 c. scalded milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook potatoes, celery and onions in the 3 cups water until tender.
Drain - save water - blend in blender - return to pot with water.
Add milk, bouillon and butter.
Mix sour cream with flour and add to soup mixture.
Cook, stirring constantly until mixture thickens and bouillon cubes - dissolve.
Stir in salt and pepper. (I cook a few extra finely diced potatoes to add to the blended soup to give it extra texture.)
Serve topped with crumbled bacon, sliced green onion and finely shredded cheese.
