Potato Soup
Potato Soup is an moderately easy dinner. Made with 1 medium chopped onion, 2 tbsp. flour, milk (approximately 1 qt.), 3 medium potatoes or more, chopped into bite-size pieces and 2 hard-boiled eggs, this recipe delivers authentic, satisfying flavors. Saute onion in margarine until golden.
Add flour and slowly stir in milk until creamy and thick.
Continue adding milk and water alternately to sauce as it thickens.
Add potatoes and spices to taste.
Continue to cook, stirring so it does not stick. When potatoes are fully cooked, add 2 chopped up hard-boiled eggs.
Simmer another 10 minutes.
Serve with garlic bread and tossed salad.
