Potato Salad
Potato Salad is an moderately easy dinner. Made with 4 to 5 small to medium size potatoes, 3 hard-boiled eggs, chopped, 1/2 c. pickle relish, pinch of celery salt or seed and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook potatoes with skins on until soft.
Remove from fire and spray with cold water.
When cool, remove skins and mash potatoes. Add eggs, pickle relish, celery salt, salt and onion.
Add mayonnaise to hold together; mix thoroughly; chill 3 to 4 hours.
