Potato Salad
Potato Salad is an moderately easy dinner. Made with 1/2 c. clear italian dressing, 7 medium potatoes, cut up and cooked, 3/4 c. sliced celery, 1/3 c. sliced green onions and 4 hard-cooked eggs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Pour dressing over warm potatoes; chill 2 hours.
Add celery, onions and chopped egg whites.
Sieve yolks; mix with the mayonnaise, sour cream and mustard; fold into salad.
Add salt and celery seed to taste.
Chill 2 hours.
(I usually chill longer.) Makes 8 servings.
