Potato Doughnuts
Potato Doughnuts is an moderately easy dinner. Made with 1 c. hot mashed potatoes, 1 1/2 c. sugar, 1 c. buttermilk, 1/2 tsp. salt and 3 lightly beaten eggs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat together potatoes and sugar.
Beat in buttermilk, salt and eggs.
Sift nutmeg, flour and baking soda together and stir into potato mix to make a soft dough.
Roll out on floured board and cut with doughnut cutter.
Or mold into small "meatballs" to make bite-sized "munchkins".
Fry until golden.
Drain on paper towels. Sprinkle with sugar.
Serve warm if possible.
Makes approximately 3 dozen.
