Potato Chowder
Potato Chowder is an moderately easy dinner. Made with 4 strips bacon, 1/2 c. sliced carrot, 2 c. diced raw potato, 1 1/2 tsp. salt and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In heavy kettle, cook bacon until crisp.
Remove to drain. To drippings, add carrot, potato, salt, onion and boiling water. Cover and simmer 15 minutes or until tender.
Add sage, paprika, pepper and parsley.
Measure flour into bowl and gradually blend in milk.
Stir into vegetable mixture; cook until soup thickens. Crumble bacon over each serving.
Makes 4 servings.
