Potato Cheese Casserole
Potato Cheese Casserole is an moderately easy dinner. Made with 6 medium or 3 large potatoes (1 3/4 to 2 lb.), 1/4 c. butter, melted, 1/2 tsp. regular or seasoned salt, 1/8 tsp. white pepper and 1 c. grated swiss cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Butter a square glass 2-quart 8 x 8 x 2-inch baking dish.
Peel potatoes and cut crosswise in thin slices.
Arrange overlapping slices in rows, in prepared baking dish, making sure top is flat. If not they may get brown.
Pour butter over potatoes and sprinkle with salt.
Bake in a preheated 500° oven until potatoes are tender when tested with a fork and top and bottom layers are slightly crisp, about 20 to 30 minutes.
Remove from oven.
Sprinkle with Swiss and Parmesan cheese.
Return to 500° oven until cheese is melted, about 5 minutes.
Serves 6.
