Potato Casserole
Potato Casserole is an moderately easy dinner. Made with 6 to 7 medium potatoes, 1 medium onion, finely chopped, 1 can creamed soup (chicken, mushroom or celery), salt and pepper to taste and 1 (8 oz.) carton sour cream, this recipe delivers authentic, satisfying flavors. Scrub potatoes and boil until just done (don't let them get mushy).
Cut into cubes (leave skin on).
Place in greased 9 x 13-inch pan.
Add salt and pepper.
Sprinkle with onion, reserving a few to sprinkle on top.
Warm soup and sour cream and pour over potatoes.
Mix gently.
Sprinkle cheese over top.
Bake at 325Β° until thoroughly heated and cheese has melted.
