Portuguese Breakfast
Portuguese Breakfast is an easy dinner. Made with 1 lb. bacon, 2 1/2 lb. tomatoes, 4 or 5 eggs and 4 or 5 pieces toast, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook bacon in a 10-inch skillet.
Remove bacon and pour off grease.
Chop up tomatoes into small pieces.
Put tomatoes into skillet and simmer until tomatoes are stewed (lots of liquid). Add cooked bacon to tomatoes (mix together).
Poach eggs in tomatoes and bacon.
As eggs cook, let some of the liquid cook off.
When eggs are firm, cut through all sections and place on toast.
