Puncture tenderloin every inch on top and insert sliver of garlic.
Place in roasting pan and cook for 3/4 to 1 hour at 325°, or until meat thermometer reaches 160° to 170°.
About 20 minutes before roast is done, cut onion and bell pepper into slices and add to pan.
Save juices for gravy.
