Porcupine Balls
Porcupine Balls is an easy dinner. Made with 2 lb. hamburg, 2 eggs, 1 box rice-a-roni (beef flavored) and 1 onion, diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix meat, eggs, rice and onion in large bowl until rice is all mixed in well.
Make into balls, about size of walnut (40 to 50 balls).
Brown meat balls on all sides.
Take out of frypan; put in another kettle.
Mix 3 1/2 cups boiling water with flavor envelope from Rice-A-Roni; pour over balls.
Simmer slowly for 30 to 45 minutes.
Add more water, if needed, or can thicken like gravy.
