Polynesian Vegetables is an moderately easy dinner. Made with 1 (12 oz.) jar apricot preserves, 2 tbsp. soy sauce, 1/4 tsp. garlic powder, 1 yellow pepper, cubed and 1 medium pineapple, pared and cut into 1-inch chunks, this recipe delivers authentic, satisfying flavors. In skillet, combine preserves, vinegar, soy sauce, ginger, garlic powder and 3/4 teaspoon salt.
Add peppers and onions. Cover and cook (stirring occasionally) until vegetables are tender but crisp.
Add tomatoes and pineapple.
