Polynesian Chicken
Polynesian Chicken is an moderately easy dinner. Made with 3 to 4 chicken breasts, skinned and boned, 1/2 to 1 green pepper, cut in chunks (bell pepper), 1/2 c. diagonally cut celery, 1 medium onion, cut in eighths and 1 to 2 c. snow peas or broccoli, this recipe delivers authentic, satisfying flavors. Cut chicken in strips; stir-fry in 1 to 2 tablespoons oil, until no longer pink.
Remove.
Stir-fry all vegetables 3 to 4 minutes, until just tender (crisp).
Add gravy, soy sauce and ginger, then add meat and heat.
Last, add the pineapple chunks. Serve over hot rice.
