Pineapple Salad
Pineapple Salad is an moderately easy dinner. Made with 1 box jello (lemon or orange), 1 1/2 c. boiling water, 1 c. cold water plus ice cubes, 2 tbsp. lemon juice and 1 (20 oz.) can pineapple chunks, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Dissolve gelatin in 1 1/2 cups boiling water.
Combine 1 cup cold water and enough ice cubes to make 2 1/2 cups.
Add to gelatin with lemon juice; stir 2 minutes.
Let stand until slightly thickened.
Fold in drained pineapple and shredded carrots.
Chill.
